Pru, Phuket: The 2019 MICHELIN Guide to Bangkok, Phuket and Phang-nga awarded a star to just one restaurant in Thailand's south. That eatery is Pru, part of luxury Phuket resort Trisara.

The man behind the magic: Pru is the creation of chef Jim Ophorst. His incredibly innovative dishes are made with products found around Thailand -- with a focus on the terroir of the Andaman Sea.

Elevating veggies: Seeing what Ophorst can do with a simple vegetable is particularly mind-blowing. Pru's signature dish is carrots cooked "in the soil they came from," with fermented carrot juice and cured egg yolk from the resort's farm.

Inside Pru: "It's all about the experience," says Ophorst. "We take guests on a journey from the moment they step in to the moment they step out."

Pru Jampa: Many of Pru's sustainable, organic ingredients are pulled from the resort's 16,000 square meter farm, called "Pru Jampa," located in the northeast of Phuket.

River prawn: In this dish, roasted Surat Thani river prawn is served with baby broccoli and XO sauce made from local seafood.

Leek: Charred leek with mushrooms from the forest of Phang Nga is served with house cured Kurobuta ham.
