Le Souffle —
Le Souffle is located in the ritzy heart of Paris's 1er arrondissement. You can be pretty sure the souffles won't collapse -- the place has been making them rise since 1961.

Le Coq Rico —
Le Coq Rico, in the 18eme arrondissement, celebrates all things feathered. That's why it calls itself "the bistro of beautiful birds."

Bar a Rillettes Terroir Parisien —
Rillettes is salted, chopped meat cooked slowly in fat until it has a pate-like consistency. Superstar chef Yannick Alleno has opened a rillettes bar at Terroir Parisien in the 2eme arrondissement.

Pomze —
The team at Pomze, in the 8eme arrondissement, are evangelists for the humble apple: "They are like notes for our musical score, like colors for our palette." There's a touch of "pomme" in every dish here.

Maison de la Truffe —
La Maison de la Truffe has been serving all manner of exquisite, and expensive, truffles to Parisian gourmands since 1932. It has two restaurants in Paris and a boutique in Courchevel in the French Alps.
