
1. Never compromise on the quality of ingredients —
Pastry chef to the stars, Peggy Porschen, reveals her seven tips for creating the perfect cake. Number one is to use top quality ingredients. "It makes a huge difference," says Porschen.
"In particular, a really good butter is really important -- I use a French Lescure butter for baking which is one of the best."

2. Learn from the masters —
"Before you start baking, do some online research and watch some tutorials," says Porschen.

3. Use decent equipment —
"Depending on what you want to do, get yourself a good starter kit," explained the baker whose high-profile clients include Kate Moss, Elton John, and Madonna.
4. Start with something you would really love to make —
"But don't push yourself too hard. Start simple and build up your skill," says Porschen.

5. Never underestimate the little ingredients —
"For example, a really good vanilla bean or lemon zest like a Sicilian lemon which is unwaxed," she added.
6. Be patient —
"A lot of people try to pipe something or try to bake something and give up because they can't do it. In Germany we have a saying: 'Master's don't fall from the sky.' It's like the saying: 'Practice makes perfect.' So you have to keep trying," explained Porschen.

7. Weigh the ingredients out accurately —
"People who love to cook in general are sometimes not naturally gifted bakers," explained the award-winning pastry chef."What you need is a lot of patience, take things slow and don't panic. Follow the method and the recipe really precisely, that's very important."
