Around 350,000 people use Zurich’s central train station every day. Keeping those travelers fed and watered is a monumental task.
It takes the equivalent of 100 football fields full of wheat to make the flour used in the station every year. The in-house butcher uses 140,000 kg of meat per year, and chefs in the station’s underground kitchens smoke 30,000 kg of salmon each year.
Around 500 people, including 120 chefs, work at 25 food outlets.
“The whole year we use 90 tons of meat only to produce sausages,” says executive chef Christoph Banz. “It’s a big business and we produce everyday fresh.”
His team’s specialties include smoked sausages, veal sausages, hot dogs, and even beer sausages.
“We start working here about six thirty in the morning and finish more or less at three or four o’clock in the afternoon,” Banz says. “Six until 11 a.m. is the highest pressure. All the outlets need their produce fresh for lunchtime.”
