
Crazy cucina: Italian maverick chef Valerio Braschi is creating a name for himself with radical reworkings of classic Italian dishes.

Dental breakdown: Braschi's take on lasagna is a toothpaste tube filled with a creamy mix of beef ragout, béchamel, nutmeg and lasagna distillate. It's squeezed onto a 'toothbrush' of oven-baked egg pasta.

Lasagna Lollipop: Another version of lasagna resembles a bonsai tree.

Zebra sirloin: Braschi also has his own version of surf and turf. In this case a zebra steak served with scampi.

Egg dessert: This egg isn't all it's cracked up to be. In fact it's an elaborate dessert. An almond icing shell contains a sesame and apricot center.

Sachet of pizza: Deep pan or thin and crispy isn't a consideration here. Braschi serves his pizza in an edible sachet.

Rabbit ear: Not one for the kids' menu, this dish features a bunny ear that's been boiled and fried.

Picture perfect: La Mia Santarcangelo, or My Santarcangelo, involves diners staring at a plate decorated with a photo of Braschi's home town, while sampling a liquid version of the local piadina flatbread made with sausages.

Cup of steak: A dish called Drink Meat is essentially a beaker of steak. Judging by the color, it's not too rare.

Whale food: Braschi's scallop with cocoa beans sits in a foam made from plankton.
