Chan Kwok-Tung is an experienced dim sum master with three decades of experience -- but he's new to the Hello Kitty world. He says the toughest challenge is to get the proportion of Hello Kitty's features right on the food.

There are specialty Hello Kitty products customers can purchase to take home, including wine, wine glasses and tea leaves, pressed into the shape of Hello Kitty's head.

Tough process —
The restaurant has been in the works for a year and a half, and everything -- from the decor to the food -- had to be approved by Sanrio, the Japanese company that owns the Hello Kitty brand, said restaurant owner Man Kwong.

Hello beaute —
Apple House (the VIP room) features Hello Kitty as China's four ancient beauties in Chinese-style scroll paintings.

Healthy Kitty —
Hello Kitty-inspired rice and noodle dishes on the menu.

Family friendly —
Hello Kitty Chinese restaurant is a family-friendly dining concept in Hong Kong, Man said. And he hopes it'll encourage diners to put their phones away during dinner.

Staffers must wear specially-designed uniforms, and they receive character training to learn about Hello Kitty and her family tree before starting on the job.

Verdict: Worth coming back for —
The restaurant seats about 70 and some dishes are made in limited quantity daily.
