Kalguksu, Gangneung: Located down an alley in Gangneung city, Geum-Ak Kalguksu is a one-dish joint. And that dish is kalguksu -- a thick, fiery noodle soup.

Seonji gukbap, Andong: Diners flock to Okya restaurant to sample the seonji gukbap -- commonly described as a "hangover stew with clotted cow's blood."

Yukhoe bibimbap, Jinju: To the west of Busan, Jinju is home to a variant of the globally popular bibimbap. It is the yukhoe -- raw strips of julienned beef -- that distinguishes Jinju bibimbap from the other iterations of the South Korean staple.

Gomtang, Naju: In the town of Naju, Holliday recommends trying the beef broth at White House restaurant. The no-frills space serves gomtang soup with beef, rice, spring onion and thin, noodle-like egg strips.

The food of Jeju island: The food of Jeju island, off the southern coast, is quite different from that found on the mainland. Holliday recommends mom-guk -- a simple pork and seaweed soup.

Kongnamul gukbap, Jeonju: A haven for food lovers, Jeonju city is known for its kongnamul gukbap -- a bean sprout soup. To try the dish, Holliday recommends Hyundai-ok restaurant, where it's served in a stone bowl with several side dishes.
