Louisville chef Chris Ross was in denial about his increasing size after high school. Then one day in 2004, he stepped on a normal scale, and it refused to register his weight.

The father of three found another scale that told him he had reached 327 pounds. "To realize that you're not just obese, but morbidly obese -- it was pretty tough on the mental psyche," Ross says.

Ross realized he was consuming more than 4,000 calories a day just from tasting food in the kitchen.

He cut down on his portion sizes and started spitting out his taste bites while cooking. He also started walking -- then jogging -- until he lost more than 130 pounds.

Today Ross focuses on paying attention to how much he's consuming. He hasn't changed what he cooks; he just eats less of it.
